Farmer’s Ham

The Farmer’s Ham is made from a whole fricandeau piece with skin and fat strip. The whole pieces are salted, put over hot smoke, and cooked. The Farmer’s Ham is not pressed. Immediately prior to packaging, the skin is removed so that the full flavor is preserved.
